Apricot-Glazed Chicken in foil pack

A simple dish that used jam from the can.    Subsitute any kind of meat or any kind of jelly or jam to make a delicious and easy to prepare dish at the campfire or grill.

Try strawberry or blueberry jam for an different kind of zing.     Serve with rice or orzo for a complete protein, sugar and carbohydrate meal that is perfect to fuel yourself or your family any disaster or emergency situation.

 

Ingredients:

  • 1 boneless chunk or chicken or pork chop (steak doesn’t work super well with this recipe.
  • 1/3 cup apricot preserves (or any preserve you may have handy)
  • 1 tablespoon soy sauce
  • ½ package frozen stir-fry vegetates or cubed fresh vegetables
  • garlic powder, salt, pepper

 

Directions:

  1. Mix together the apricot preserves, the soy sauce, and any seasoning you’d like to add.
  2. Place the meat in the center of the sheet of foil.
  3. Spread half of the apricot sauce on top.
  4. Put the veggies on top/around the meat.
  5. Pour the rest of the sauce over the whole thing. Wrap in a tent pack.
  6. Place on hot coals or grass grill and cook for 20 minutes.
