Chicken and Mushroom Bake In Foil is a simple way to get a good meal in at the end of the day in any type of disaster or survival situation based on mushrooms that you find growing about.

You can use any mushrooms, but be warned, wild mushrooms come in all sorts varieties and some are not at all eatable.   Many editable wild mushrooms also have close cousins that are poisoness.   Unless you really know your mushrooms you should always consult a book or expert.

There usta be a general saying that we learned in the military survival trainings that “mushrooms don’t have very much nutritional value and because you can  easily get a posionus one, you should tend to stay away from foraging mushroom.

Ingredients for Chicken and Mushroom Bake In Foil

  • 1 pound skinless, boneless chicken breast meat  (or substitute Ham)
  •  cubed 2 onions, diced
  • 1 (8 ounce)  sliced fresh mushrooms
  • 1 yellow bell pepper, seeded and sliced into strips
  • 4 cloves garlic, sliced
  • 1 red bell pepper, seeded and sliced into strips
  • 4 small potatoes, cubed
  • 1/4 cup olive oil
  • 1 lemon, juiced

Directions for Chicken and Mushroom Bake In Foil

  1. In a large bowl or a large zip-top bag, combine the chicken/ham, onion, mushrooms, yellow pepper, red pepper, garlic, and potatoes. Pour in the olive oil and lemon juice, then mix well.
  2. Evenly divide the mixture between 4 large sheets of aluminum foil. Top each with another sheet of foil, and roll up the edges tightly. Wrap each packet again, securely in another sheet of foil to double wrap.
  3. Cook in the hot coals of a campfire or on a grill over a fire or BBQ, until the chicken is opaque and the juices run clear and the potatoes are tender, around 40 minutes.
