Lightly Fried Green Beans is a traditional  Szechwan  dish and is usually cooked with chili, preserved vegetables, and dried shrimp. This simple recipe dispenses with all these additional ingredients to keep it simple for a SHTF type scenario and uses only garlic and rice wine to enhance the natural sweetness of the green beans.   Cook over High heat with a wok or large skillet pan.  Use BBQ Briquettes or campfire coals to get the highest heat.

 Lightly Fried Green Beans Ingredients:

½ Tablespoon canola or olive oil

  • 4 garlic cloves, finely chopped
  • 1 red chili, deseeded and sliced
  • 1 pound fine green beans, topped and tailed
  • 1 teaspoon shoyu or tamari sauce
  • 1 tablespoon Chinese rice wine or dry sherry
  • 3 ½ tablespoons Vegetable Stock

Lightly Fried Green Beans Directions:

  1. Heat the oil in a nonstick sauté pan over a high heat until hot. Add the garlic and chili, and stir-fry for a few seconds.
  2. Toss in the green beans and stir-fry for 1 minute; then add the soy sauce, rice wine, and vegetable stock. Cover and cook for about 2 minutes.
  3. Remove the lid and stir-fry the beans for another 1-2 minutes until the stock has evaporated
