Oatmeal Casserole

A great dish with fruit and oats.   It’s healthy for you and filling! What more could you want in a disaster cooking situation~

Add a second cup of oats (with a half cup of water) to stretch this dish out at cooking time out to feed up to 8 people.

Serves 4 to 5
Cooking Time: 20 minutes

 

 

 

Ingredients:

  • 15-ounce can of pie-sliced apples (not apple pie filling)
  • 20-ounce can of chopped pineapple with juice
  • 1 cup uncooked oatmeal (not instant or steel cut)
  • 2 cups water or nonfat milk
  • 1 teaspoon each cinnamon, baking powder
  • 1/2 cup liquid egg substitute
  • 1/2 cup broken nuts (optional)
  • Pinch of salt

Directions

  1.  Spray or grease a slow cooker insert or Dutch oven.
  2. Put everything inside and stir well.
  3. Cover and cook on low, or in medium to hot coals, for 8 hours.
  4. Serve as is, or with sugar and Greek yogurt or cream.
